Red Potatoes and Pearls

Ingredients

  1. 2 pounds small red potatoes
  2. 1 pounds peeled pearl onions
  3. 4 cups chicken stock
  4. 2 strips bacon, cooked and crumbled
  5. 1 teaspoon garlic powder
  6. 1 teaspoon Italian seasoning
  7. 2 tablespoon olive oil
  8. salt and pepper to taste

Directions

  1. In a large stock pot, place the potatoes and onions in a single layer. Slice any large potatoes so that they are all approximately the same size.
  2. Add the chicken stock.
  3. Sprinkle the bacon, garlic powder, Italian seasoning, olive oil, butter, salt, and pepper evenly into the pot.
  4. Cook over medium-high heat until the broth has completely evaporated, gently stirring the mixture occasionally.
  5. Serve immediately.
