- 2 pounds small red potatoes
- 1 pounds peeled pearl onions
- 4 cups chicken stock
- 2 strips bacon, cooked and crumbled
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoon olive oil
- salt and pepper to taste
Directions
- In a large stock pot, place the potatoes and onions in a single layer. Slice any large potatoes so that they are all approximately the same size.
- Add the chicken stock.
- Sprinkle the bacon, garlic powder, Italian seasoning, olive oil, butter, salt, and pepper evenly into the pot.
- Cook over medium-high heat until the broth has completely evaporated, gently stirring the mixture occasionally.
- Serve immediately.
